To kick of this recipe feed, I have a savoury granola. It has become a favourite in our house. This recipe is part of The Modern Mess gift guide which member are getting this week. This makes a great pantry staple. It is the perfect topping for salads, soups, on top of eggs, on roast or steamed vegetables. Anything that needs a bit of crunch. It also makes a great homemade gift! Perfect for a Chirstmas present perhaps?
The dry ingredients are interchangeable with what you have in your pantry, just keep it around six- seven cups of dry ingredients. Don’t go too heavy on the buckwheat, they go nice and crunchy, but you don’t want to many of them.
For gluten free, sub the oats for more seeds and nuts.
Savoury Granola with nuts, seeds and sumac
1 cup cashews (or use any nut/seed you like)
1 cup buckwheat groats
1 cup pumpkin/sunflower seeds
2 cups wholegrain /jumbo oats
1 cup coconut shavings
½ cup sesame seeds
¼ cup olive oil
2 heaped tsp mustard
2 tsp maple syrup
1 teaspoon each of ground coriander, sumac and smoked paprika
1 tsp salt
Optional extras – zest of lemon or orange, fresh thyme, pinch of chilli. You can also mix up the spices depending on what flavour profile you are after.
Mix all the dry ingredients together. Combine the dressing ingredients and then pour over the dry. Toss well and season to taste. Place on a large flat oven tray.
Bake for about 45 minutes at 150 degrees, turning the granola every 10-15 minutes or until everything is toasted nicely and is golden brown.
I would say this keeps in an airtight container for a good month.
