Green pancakes with toppings

This makes lots of pancakes but you can freeze them. The mix keeps covered or in a jar in the fridge for a few days too as do the cooked, covered pancakes. Kids were a fan so that’s a bonus! I put them in their lunchboxes. Great as a breakfast, lunch or dinner.

You can use a GF flour blend to make these gluten free. Sometimes I do half plain flour half chickpea flour. Recently I tried half buckwheat, half chickpea flour.  If you use gluten free flour the batter does benefit from resting.

The last time I made these I only had one cup of milk so I used half a cup of yoghurt and topped it up with water. I have also used half milk half buttermilk.

Makes 8x 20 cm pancakes – make them whatever size you like.

3 eggs
2 cups milk of choice – see note above for other options
2 cups flour or choice
1 onion, peeled and chopped – try shallots or spring onions too
2 cloves garlic, peeled
1 cup herbs – parsley, chives, dill, coriander, celery leaves, a little oregano, mint, basil, lovage, sorrel, carrot tops etc.. Anything!
1 tsp salt
2 cups packed greens – spinach, kale, silverbeet etc – about 100g – have less? not to worry – go ahead.
Black pepper

While you are making the batter, heat a pan on a low heat. This helps it heat evenly and you can keep the first pancake! If you have made the batter in advance, make sure you evenly heat the pan before proceeding.

Place all ingredients in a blender and blend until smooth.

Heat a pan on a medium heat with ghee or oil and butter or whatever you fancy. Add the mixture to the pan and flip when a few bubbles appear. Keep warm while you cook some more.


I like to have some salad greens or I quite like a shredded vegetable salad, legumes or a poached egg or both. Cheese is good. I always include something tomato based like slow cooked toms or fresh tomato and I quite like a dollop of Greek yoghurt. Harissa, pesto or similar. Some sort of braised vegetable or a lentil ragu is great! Anything goes with the toppings!
